Wagyu occurs as breed of cattle genetically predisposed to intense marbling, & produces the high percentage of oleaginous, unsaturated fat.

There are 4 major breeds of washington-gyu (washington means Japanese & gyu means bos taurus): Japanese Black, Japanese Light brown, Japanese Polled, & Japanese Shorthorn. Japanese Kobe beef is from Tajima-ushi, which occurs as nature and severity of Japanese Black.
